I thought it might be due to speed so i tried a slow turn but it was still crap. Guess ill just pull it around for now or launch with sails then switch to motor.

Tires,barrels, and buoys are basically only for creating a raft other than a couple things. Kind of a bonus tip but keep your movement while sailing to a minimum. You can try but more than likely you are not going to catch that raft if you go for a swim. Put the sail within reach of the rudder.
